Tomatoes with feta


Preparation 35 minutes
  • Pre heat the oven to 180°C (356°F)
  • Cut a cross halfway into the top of each tomatoe and gently open them (do not cut them all the way)
  • Place the tomatoes in a baking dish. Pour a little olive oil over them and season with pepper
  • Finely chop the parsley, olives and spring onion and place it in a bowl. Crumble the feta and add it to the mixture with a splash of olive oile and ¾ of the pine nuts. Mix well, season it with pepper, and fill the opened tomatoes with the mixture. Finish with the rest of the pine nuts
  • Put the baking dish in the over for 25/30 minutes
  • Sprinkle with olive oil over the tomatoes before servingEnjoy!
