- Peel and cut the sweet potatoes and parsnips into 4cm cubes.
- Bring a large pan of lightly salted water to the boil and boil the potatoes and parsnips for 15 to 20 minutes (until tender).
- Drain and return to the pan.
- Add the 1/3 cup of apple cider and salt and pepper to taste.
- Mash until nearly smooth.
