Strawberry salad with arugula

Preparation

Preparation 20 minutes
  • In a large bowl, toss the strawberries (rinsed, hulled, and quartered) with 2 tablespoons balsamic vinegar; let sit 5 to 10 minutes.
  • In a small bowl, whisk together the two other tablespoons balsamic vinegar with 4 tablespoons olive oil and 1/2 teaspoon each salt and pepper.
  • To the strawberries, add the vinaigrette and the arugula (trimmed and thoroughly washed and dried).
  • Toss to combine, and serve.
  • If you like, you can add a bunch of goat cheese crumbles to push it over the top.
