Roasted fennel

Preparation
Preparation 50 minutes
- Preheat oven to 400°F
- Cut off stalks, halve bulb lengthwise, cut lengthwise in app. 1 inch pieces
- Rub olive oil over the fennel to coat. Sprinkle some balsamic vinegar over the fennel to coat.
- Lay out the fennel on a baking sheet and bake/cook to beginning to caramelize (30-40 minutes)
