Kale Frittata

  • Preheat oven to 190°C/375°F. Whisk the eggs, egg whites, salt, pepper, cheese and oregano in a large bowl
  • Lightly coat an 8-inch ovenproof cast-iron or nonstick skillet with cooking spray. Heat over medium. Add the kale and tomatoes. Cook and stirr until hot (+/-3 minutes). Add the eggs and stir gently to combine.
  • Transfer to the oven and bake until set and hot (+/-20 minutes). Cut in wedges.
