Cauliflower and parsnip mash

Preparation

Preparation 25 minutes
  • Bring a large saucepan of water to a boil over high heat. Add the cauliflower and parsnip. Cover, reduce the heat to medium-low, and cook until soft and tender, about 20 minutes.
  • Drain the vegetables and mash together. Gradually add milk and butter and continue to mash to desired consistency.
  • Season to taste with salt and pepper.
