The egplants are eaten all over the world in savory recipes. Common known is the dark purple variety, but there are also  white and graffiti varieties. An eggplant has a creamy texture and rich, meaty flavour. They are versatile, can stand-in for meat in any recipe and they make filling and satisfying dishes.
