You may be used to seeing a courgette that’s green and speckled, but there’s a yellow variety of courgette. The flower of the courgette plant is also edible, known as Courgette Flower.Courgette is fat-free, cholesterol-free, low in sodium, rich in manganese and vitamin C and has more potassium than a banana.
The most flavorful courgettes are small- to medium-sized.
