Broccoli is a member of the cabbage family, making it a cruciferous vegetable. It’s name is derived from the Italian word broccolo, meaning the flowering top of a cabbage. Broccoli is very high in Vitamin A + C and fiber
The stalks are good for you too. They have a fairly sweet taste and contain a ton of fiber – more than the flower itself. Chop the stalks smaller and cook a bit longer than the tops and you’ll have perfectly cooked, tender broccoli.
You can keep broccoli in the refrigerator for 2 – 5 days.
